Pumpkin Muffins

I love to bake and help in the kitchen. I usually make breakfast and I love to make muffins.
I recently found a recipe for Pumpkin Muffins.
I would like to share the recipe with you.
Here it is!


Pumpkin Muffins


Ingredients

1-1/2 cup All purpose Flour
1 teaspoon Baking Powder
1 cup Pumpkin Puree (from a 15oz. can)
1/2 cup Vegetable Oil
2 Large Eggs
1 teaspoon Pumpkin Pie Spice
1-1/4 cup Granulated Sugar
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 Tablespoon Sugar (for the Topping)
1/2 teaspoon Cinnamon (for the Topping)

Instructions

Place muffin liners inside the muffin cups. Preheat oven to 350F.
Whisk together flour and baking powder in a small bowl. Set aside.
(If you don't have Pumpkin Spice, you can mix together, 1/8 of a teaspoon each of cinnamon, nutmeg, cloves, ginger, and allspice.)
Whisk together pumpkin puree, oil, eggs, pumpkin spice, 1 1/4 cups sugar, baking soda, and salt
in a large bowl until smooth. Then whisk in the flour mixture until just combined.
Stir together cinnamon and remaining 1 teaspoon sugar in another bowl.
(We like to put a Streusel on the top instead of the cinnamon and sugar mixture. The recipe is at the bottom of the page if you would like to try it)
Divide batter among muffin cups (each should be about 3/4 full), then sprinkle the tops with the cinnamon-sugar mixture (or the streusel topping). Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, about 25 to 30 minutes.
Cool in the pan on a rack for five minutes, then transfer muffins from the pan to the rack and cool to warm or room temperature (or I like to eat them hot).

Streusel
Ingredients
1/3 cup Flour
3 Tablespoons Brown Sugar
2 Tablespoons Oats
2Tablespoons Butter
Instructions
Combine til crumbly.
Use to top breads, muffins, oatmeal, etc.

sounds yummy, Hannah. Yesterday I made pumpkin bread and the recipe sounds very similar to your muffin recipe. That streusel topping looks delicious! We'll have to try it sometime :)
