Pumpkin Muffins

I love to bake and help in the kitchen. I usually make breakfast and I love to make muffins.
I recently found a recipe for Pumpkin Muffins.
I would like to share the recipe with you.
Here it is!


Pumpkin Muffins


Ingredients

1-1/2 cup All purpose Flour
1 teaspoon Baking Powder
1 cup Pumpkin Puree (from a 15oz. can)
1/2 cup Vegetable Oil
2 Large Eggs
1 teaspoon Pumpkin Pie Spice
1-1/4 cup Granulated Sugar
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 Tablespoon Sugar (for the Topping)
1/2 teaspoon Cinnamon (for the Topping)

Instructions

Place muffin liners inside the muffin cups. Preheat oven to 350F.
Whisk together flour and baking powder in a small bowl. Set aside.
(If you don't have Pumpkin Spice, you can mix together, 1/8 of a teaspoon each of cinnamon, nutmeg, cloves, ginger, and allspice.)
Whisk together pumpkin puree, oil, eggs, pumpkin spice, 1 1/4 cups sugar, baking soda, and salt
in a large bowl until smooth. Then whisk in the flour mixture until just combined.
Stir together cinnamon and remaining 1 teaspoon sugar in another bowl.
(We like to put a Streusel on the top instead of the cinnamon and sugar mixture. The recipe is at the bottom of the page if you would like to try it)
Divide batter among muffin cups (each should be about 3/4 full), then sprinkle the tops with the cinnamon-sugar mixture (or the streusel topping). Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, about 25 to 30 minutes.
Cool in the pan on a rack for five minutes, then transfer muffins from the pan to the rack and cool to warm or room temperature (or I like to eat them hot).

Streusel
Ingredients
1/3 cup Flour
3 Tablespoons Brown Sugar
2 Tablespoons Oats
2Tablespoons Butter
Instructions
Combine til crumbly.
Use to top breads, muffins, oatmeal, etc.

Seedlings

I have started a Bible study for some younger children in our neighborhood.
I named it Seedlings (which stands for, Serving,Encouraging, Enlightning, Doing, Loving, Inspiring, Nurturing, and Growing in the Savior).
We always quote our verse that we memorized. And have a little study on our new verse. We always do a small craft.
And we sometimes sing a song.




I had to video this about five or six times!

If you want to be a long distant member, you can check every week for the new verse that we will be memorizing. All that you have to do is memorize the verse and quote it to your parents.
I hope that you can be a member.

Autunm in Oklahoma

Fall is my absolute favorite season of the year.
This year all of the trees are bright and have vibrant colors.
Some of the colors of these trees are,
Purple
(believe it or not),
Some are still green,
Orange Yellow,

Red,
and there are so many colors that I can't hardly explain what it looks like here in Tulsa.
It is so beatiful this time of year!

How does your garden grow?

Early last Spring, our family planted a raised garden. Although we are at the end of the growing season and are harvesting the last of our vegetables, we are very thankful that God allowed our garden to produce so well.
We have had a bountiful supply of okra, tomatoes, bell peppers, and jalapeno peppers.
We also had tomatillas, which worms and our dog, Maggie, seemed to love.





We had so much fun planting and maintaning our garden. We especially enjoyed eating all that we harvested from it!!!

Horse Crazy


I was walking around the church building taking pictures after the fellowship meal that we had, and it was so interesting how the mother protected and nurtured this pony.
I am thankful that God allowed me to be there and see his wonderful creation. I am also thankful that he allowed me to get these pictures.
